配方说明:

Mincemeat Pies

配方组成:

Bread Flour/4 lb.
Cake Flour/4 lb.
"Breadlac" Nonfat Dry Milk Solids/5 oz.
Pour over the above and allow the shortening to melt completely.
Stir with a hand whip until the mix becomes liquid
Salt/4 oz.
Shortening/3 lb.
Boiling Water/3 lb.
Granulated Sugar/3 oz.
Lard/3 lb.

配制方法:

Sift and add. Incorporate well, but do not mix more than necessary.
Chill overnight.
This piecrust formula is good. It is somewhat unusual in character and suitable only for twocrust pies.
Roll this crust thick and bake it dry, without egg wash or top dressing.
It will make thirteen 9-in. pies.
