Cream Pie
配方组成:
Vanilla Extract/1 oz.
Butter/4 oz.
Add to the milk and bring to a rolling boil, stirring frequently.
Water/2 lb.
Whole Eggs/1 lb.
Pastry Flour/8 oz.
Cornstarch/8 oz.
Yellow Color/If desired
Dissolve to make a smooth cream. Pour slowly into the boiling
mixture, stirring until it thickens. Then remove from heat
Lukewarm Water/6 lb.
Granulated Sugar/2 lb. 12 oz.
Shortening or butter/4 oz.
Salt/1 oz.
"Breadlac" Nonfat Dry Milk Solids/1 lb.

Stir in last.
This makes eight 9-in. pies.
For cocoanut-cream pies, stir in 1 lb. of short-thread cocoanut. Top with meringue, sprinkle with a few cocoanut threads, and brown in oven.
For banana cream, stir 2 lb. of sliced, ripe bananas into the hot filler or cut up a banana and deposit on the bottom of the baked shell before filling.
For cream-puff filling, a little fresh meringue may be folded into the hot vanilla cream, if desired. As an extender and stabilizer for whipped cream, a little chilled filling, added at the final stage, is often used.
