For banana cream, stir 2 lb. of sliced, ripe bananas into the hot filler or cut up a banana and deposit on the bottom of the baked shell before filling. For cream-puff filling, a little fresh meringue may be folded into the hot vanilla cream, if desired. As an extender and stabilizer for whipped cream, a little chilled filling, added at the final stage, is often used.
