Water/1 lb. 10 oz. Egg Yolk/6 oz. Mix together dry Shortening/4 oz. Water/7 lb. 8 oz. Cornstarch/14 oz. Powdered Orange Juice/1 lb. Powdered Lemon Juice/4 oz. Salt/0.5 oz. Sugar/3 lb. 8 oz.

Add the dry mix to this, stirring to a smooth cream. Pour the cream mixture into the briskly boiling syrup. cook until the mixture thickens, stirring constantly. Fill into baked shells while the filler is warm. When the pies are partially cooled, spread with meringue. Sift powdered sugar lightly over the top and brown in a medium oven. This makes ten 9-in. pies.
