Stabilized Meringue
配方组成:
Gum Stabilizer/7.5 oz.
Granulated Sugar/7 lb. 8 oz.
Water/9 lb.
配制方法:
Boil at least 3 minutes.
Egg Whites/6 lb.
Granulated Sugar/12 oz.
Beat to a stiff peak.
When the eggs are stiff, thread in the syrup and bring back to a soft peak. Place on the surface of the pie and brown in a medium oven.
