Lemon Chiffon Pie
配方组成:
Egg Whites/2 lb.
Sugar/2 lb.
Mix the dry ingredients together, then add the water and eggs and
make a smooth paste. Pour slowly into the boiling syrup and cook until
thick. Add yellow color as desired
Salt/1 o.
Water/4 lb.
Cornstarch/12 oz.
Powdered Lemon Juice/8 oz.
Butter or Shortening/6 oz.
Water/1 lb.
Whole Eggs/1 lb.
Sugar/2 lb. 8 oz.
配制方法:
Meanwhile beat the egg whites at medium speed until frothy; then gradually add the sugar.
When the meringue has been whipped to a stiff peak, fold it into the hot cream and combine thoroughly. Fill into baked shells while hot. Top with meringue or whipped cream.
This makes twelve 9-in. pies.
