Water/1 lb. Egg Yolk/14 oz. Mix together dry Butter or Shortening/8 oz. Water/7 lb. Cornstarch/12 oz. Powdered Lemon Juice/8 oz. Salt/0.5 oz. Sugar/4 lb. 8 oz.

Add to the dry mixture and mix to a smooth cream. Pour this cream slowly into the boiling syrup, while stirring. continue cooking until the filler thickens. Fill into baked shells. When partly cooled, top with meringue,* sift lightly with powdered sugar, and brown in medium oven. This makes ten 9-in pies. *Meringue Egg Whites/2 lb. Beat at medium speed until fairly stiff. Granulated Sugar/3 lb. Tapioca Flour/1 oz. Salt/0.25 oz. Mix together dry and add gradually to the meringue. Continue whipping until stiff. Use a bowl free of grease.
