Sugar/3 oz.
Yeast/8 oz.
Bread Flour/14 lb.
"Breadlac" Nonfat Dry Milk Solids/3 oz.
Shortening/12 oz.
Salt/4.5 oz.
Dehydrated Cheddar Cheese/1 lb. 6 oz.
Water/8 lb.
配制方法:
Sift the flour, cheese, and milk together. Prepare the dough in the usual manner, giving thorough development in a mixer at 80'F.
Give a full rise in about 1.75 hours. Fold over; then after 30 minutes, take to bench. Scale and round the pieces. After 10 minutes, mold into loaves and proof in a pan as for any other pan bread. Use 425'F. oven temperature. The yield should be 25 lb. 4 oz.
