配方组成:
Powdered Lemon Juice/1 oz.
Dissolve and add
"Breadlac" Nonfat Dry Milk Solids/1 lb.
Strong Bread Flour/14 lb.
Cake Flour/4 lb.
Salt/6 oz.
Granulated Sugar/3 lb.
Cream.
Diastatic Wet Malt/8 oz.
Whole Eggs/2 lb.
Water/8 lb.
Mace or Nutmeg/0.25 oz.
Yeast/1 lb. 8 oz.
Color (Optional)/0.25 oz.
Shortening/3 lb.
配制方法:
Add and mix to medium dough development.
The dough temperature should be 80'F. Keep the dough young. Ferment about 1 hour in the first rise, until the dough gently recedes when the hand is thrust slowly down into the center portion of the round top surface. Take to bench and make up at this point. Bake at 350 to 375'F.
The yield should be approximately 37 lb. 7 oz.
