De Luxe Raisin Bread (DOUGH)
配方组成:
Salt/4 oz.
Water/3 lb.
Bread Flour/5 lb. 5 oz.
Shortening/7 oz.
Egg Yolks/1 lb. 8 oz.
Sugar/12 oz.
Yeast/2.5 oz.
"Breadlac" Nonfat Dry Milk Solids/2 oz.
配制方法:
Beat the sugar, milk, shortening, and yolks together. Add the sponge and other ingredients. Mix to a smooth dough at 80'F. Before the dough is completely mixer, incorporate the raisins at low speed.
Prepare the raisins in advance by placing 10 lb. in a cloth sack and soaking in cold water for 5 hours and then draining.
Let the dough stand 15 minutes out of the mixer. Scale and round. Proof 15 minutes. Mold into loaves and give medium pan proof.
The oven temperature should be 425'F., the time, about 30 minutes, and the yield 25 lb. 4 zo.
This is a premium-quality loaf, having 80% raisins and an abundance of top-notch ingredients.
