Mix in an upright mixer 2 minutes at low speed, 12 minutes at medium speed. The temperature should be 78'F., the first rise 2.5 hours; the second rise, 1 hour. The scaling weight should be carefully calculated. Use 1 oz. of dough for each 5.5 cu. in. of pan space. Give a short proof. The oven temperature should be 400'F., the yield about 24 lb. The flour used should be a stone-ground whole wheat.
