Home-Made White Pan Bread
配方组成:
Yeast/6 oz.
"Breadlac" Nonfat Dry Milk Solids/6 oz.
Bread Flour/12 lb.
Salt/4.5 oz.
Shortening/1 lb. 2 oz.
Sugar/6 oz.
Water/8 lb.
配制方法:
Mix very little, adding the shortening last in melted form.
Mix no more than 4 minutes at low speed. The dough temperature should be 80'F., the first rise 1.75 hours. Take to bench in 1 hour more.
Scale the pieces but do not round. Mold at once and pan. Use 5.5 cu. in.
of pan space for each ounce of dough. Give a short proof. Bake at 425'F.
Cool at room temperature for at least 2 hours before wrapping. The yield should be 22 lb. 8 oz.
This formula is high in shortening and is a good example of a bread made by housewives. It has excellent eating and keeping qualities.
