The breads should be allowed to cool naturally at room temperature and must be thoroughly cooled before wrapping. A cooling time of 2 hours is generally sufficient to bring the temperature down to about 90'F.
This is a good precaution against mold development and also preserves the crust characteristics that are so desirable in these products.
