配方说明:
Blueberry Muffins
配方组成:
Salt/1 oz.
Granulated Sugar/4 lb.
Cream the sugar, salt, and shortening and then incorporate the whole
eggs, scraping the bowl
Cake Flour/4 lb.
"Parlac" Dry Whole Milk/4 oz.
Whole Eggs/2 lb.
Baking Powder/1.5 oz.
Water/1 lb. 12 oz.
Shortening/1 lb. 8 oz.
配制方法:
Sift the dry ingredients and add to the batch alternately with the water. Smooth out the batch.
Batch weight 15 lb. 10.5 oz. Just before scaling, fold in 2 lb. fresh or frozen blueberries. If desired, add 1 oz. vanilla extract with the water. Deposit into greased or paper-lined cups and bake at 350'F. This batch will produce about 8 dozen average muffins.
