Nonsettling Commercial Custard Pie
配方组成:
Water/6 lb.
Bring to a rolling boil; then cut off the heat. Add the flour
solution and stir well. When the flour solution has partially thickened
in the hot water and has become milky in color, add it to the milk in a
mixing bowl
"Parlac" Dry Whole Milk/2 lb. 13 oz.
Butter/8 oz.
Sugar/6 lb.
Salt/1 oz.
Cake Flour/1 lb.
Nutmeg/0.5 oz.
Whole Eggs/4 lb.
Water/3 lb.
Water/11 lb.
配制方法:
Place the sugar and egg mixture with the liquid and mix at slow speed. Bake in the same manner as the starchless pie.
It makes twenty-five 9-in pies.
