Sift together twice. INcorporate and cream to finish the mix. Peel and chop fresh apples to 1-in. pieces. Batch weight 20 lb. 10 oz. When ready to scale, fold in the apples. Scale 12 oz. to a 7-in. high-walled layer tin. If the tin is less than 2 in. deep, cut the weight to 10 oz. Sprinkle the top with brown sugar and bake at 325'F.
