Old-Fashioned Apple Cake
配方组成:
"Parlac" Dry Whole Milk/4 oz.
Add, scraping the bowl.
Water/1 lb. 12 oz.
Incorporate
High-Grade Cake Flour/4 lb. 8 oz.
Cream of Tartar/0.5 oz.
Soda/1 oz.
Medium Brown Sugar/4 lb. 4 oz.
Whole Eggs/2 lb.
Cinnamon/0.5 oz.
High-Grade Shortening/1 lb. 12 oz.
配制方法:
Sift together twice. INcorporate and cream to finish the mix.
Peel and chop fresh apples to 1-in. pieces. Batch weight 20 lb. 10 oz.
When ready to scale, fold in the apples. Scale 12 oz. to a 7-in.
high-walled layer tin. If the tin is less than 2 in. deep, cut the weight to 10 oz. Sprinkle the top with brown sugar and bake at 325'F.
