配方组成:
High-Grade Cake Flour/10 lb.
Baking Powder/3 oz.
Dissolve the "Parlac" in water, using a hand whip. Heat over a water
bath, or in the oven door to about 140'F
Whole Eggs/5 lb.
100% Granulated Sugar/10 lb.
"Parlac" Dry Whole Milk/10 oz.
Flavor/To suit
Salt/2 oz.
Water/4 lb. 6 oz.
Egg Yolks/2 lb.
配制方法:
Sift together and add to the sugar and egg mixture by folding alternately with the hot milk.
Batch weight 32 lb. 5 oz. Scale 3.5 lb. to a standard 18 in. X 26 in.
sheet pan. Bake at 425'F. Fill and roll while warm.
