Hot-Milk Sponge

配方组成:

High-Grade Cake Flour/5 lb.
Bread Flour/5 lb.
Baking Powder/4 oz.
Meanwhile dissolve the "parlac" in luke-warm water, add the butter,
and heat the liquid to 140'F. in a water bath or in oven door
100% Granulated Sugar/10 lb.
"Parlac" Dry Whole Milk/1 lb.
Water/7 lb.
Butter/3 lb. 8 oz.
Vanilla Extract/1 oz.
Egg Yolks/8 lb.

配制方法:

Sift together and add to the beaten sugar and egg mixture by folding alternately with hot milk and butter liquid.
Batch weight 39 lb. 13 oz. Deposit into pans of the desired size and bake at 375'F.
