Chocolate Butter Cream
配方组成:
Egg Whites/8 oz.
Flavoring/To suit
Shift the mixer to slow speed (first speed on a three-speed mixer or
second speed on a four-speed mixer). Drip in slowly while creaming
Whipping Cream/2 lb.
Shortening/3 lb.
Powdered Sugar/7 lb.
Nonfat Dry Milk Solids/8 oz.
Corn Syrup/6 oz.
Salt/0.5 oz.
Butter or Margarine/1 lb.
配制方法:
Continue creaming until the desired consistency is attained, then add and mix in thoroughly: Properly Conditioned* Bitter Slab Chocolate/2 lb.
Oil/4 oz.
*To condition the slab chocolate properly, heat slowly at 115 to 120'F., stirring constantly. Then cool slowly to approximately 90'F., agitating the chocolate frequently during the cooling period. Unless the chocolate is properly conditioned, it may turn gray or bloom.
