Continue creaming until the desired consistency is attained, then add and mix in thoroughly: Properly Conditioned* Bitter Slab Chocolate/2 lb. Oil/4 oz. *To condition the slab chocolate properly, heat slowly at 115 to 120'F., stirring constantly. Then cool slowly to approximately 90'F., agitating the chocolate frequently during the cooling period. Unless the chocolate is properly conditioned, it may turn gray or bloom.
