Boiled Butter Cream
配方组成:
Water/1 qt.
Butter/4 lb.
Granulated Sugar/5 lb.
Vanilla Flavor/0.5 oz.
Egg Yolks/1.5 pt.
4X Sugar/1 lb.
配制方法:
Boil the granulated sugar and water at 240 to 245'F. In the meantime, beat the butter and 4X sugar until light. As soon as the sugar syrup has boiled to the desired degree, place the egg yolks into a kettle and begin whipping. When the mass begins to foam, pour in a very little of the boiled syrup, taking care not to scald the eggs. It is well to allow the syrup to stand for some time to cool. When a real light foam is obtained, pour in all of the syrup, a little at a time, and continue whipping. This should produce a rather stiff sponge-cakelike foam. Gradually pour this into the sugar-butter mixture, agitating briskly until thoroughly incorporated. Then add the flavor.
