1. Simmer the "TVP" 20 minutes or until hydrated. 2. Saute celery and onion in oil for 10 minutes. 3. Add the "TVP", cooking liquid, spices, salt, and apples. Cover and simmer 15 minutes or until apples are tender. This can be served with cooked white rice or cooked rice to which raisins have been added (approximately 0.5 cup raisins to 3 cups cooked rice.) Condiments such as toasted and plain coconut, chopped peanuts, chutney, pineapple chunks, raisins, watermelon, and cucumber pickles can be served, to be added by the individuals.
