The casein is cut with 40 parts of water and allowed to soak 10 to 15 minutes at 50'C. Then the remaining water containing the ammonium hydroxide is added. The mixture is then stirred at 50'C. until the casein is completely dissolved. This is a 10% casein solution and should be diluted to 2% casein content before using. The "Abalyn" emulsions are not recommended for emulsions required to be stable beyond a period of 10 days to 2 weeks. The "Hercolyn" emulsions will produce the most stable emulsions with respect to age and temperature. They may be prepared by dispersing "Hercolyn" in the water phase and stirring with rapid agitation. In most cases, the emulsion thus obtained will have reasonable stability. Where a high degree of stability is required, it is suggested that the emuulsion is passed through a colloid mill.
