配方组成:
PEANUT GRITS/10
Cut beef in Silent Cutter or cube and pass through 1/2 inch plate.
Combine PEANUT GRITS, ice water, salt, seasoning and allow 15-20 minutes
standing time. Blend meat and presoaked mixture. Grind combined
ingredients through 1/8 inch plate. Form into patties on automatic
pattie maker.
FORMULA No.3 (Salisbury Steak)
Beef trim (28% fat)/100
NFDM/3.5
PEANUT GRITS/5
Pre-cooked Wheat Fines/2
Ice water/20
Tomato puree/5
Salt/1.4

Cut beef in Silent Cutter or cube and pass through 1/2 inch plate.
Pre-soak the remaining ingredients (PEANUT GRITS, pre-cooked wheat
fines, tomato puree, NFDM, salt and seasonings) in ice water for 15
minutes. Blend meat and presoaked mixture in Silent Cutter or similar
equipment. Grind through desired plate, i.e. 3/8 inch of 1/8 inch. Form
into patties or automatic pattie maker. Bake at 350'F until done.

Pre-soak the remaining ingredients (PEANUT GRITS, seasonings, salt, tomato puree, NFDM) in ice water for 15-20 minutes. Blend meat and pre-soaked mixture in Silent Cutter or similar equipment. Grind through 1/8 inch plate. Form into meat loaves of desired size. Freeze fresh or bake at 325'F to internal temperature 150'F and freeze.
