Mix sodium caseinate, corn syrup solids, "MIRA-CLEER" 340 and salt before adding to water. Mix to disperse solids. Melt fat and emulsifier and add to above mixture. Heat to 170'F to pasteurize. Homogenize at 2,500 psi. Cool to 60'F.; add acid and enhancer slowly until a pH of 4.6-4.7 is reached. Mix with light agitation. Cool to 40'F. and package.
