Imitation Sour Cream
配方组成:
Nonfat, dry milk/10.0
Lactic acid (85% lactic acid solution diluted 1:1 with water)/approx 1.0
Starch, pregal/2.5
Vegetable fat/16.0
Water/70.5
配制方法:
Dry blend NFDM and starch. Add dry blend to water with agitation.
Heat to 110'F. and add melted vegetable fat. Heat to 185'F. and hold for 10 min. to pasteurize. Homogenize at 2000 psi. Cool to 60'F. Adjust pH of final product with lactic acid to approximately 4.5-4.6.
