Gum guar/0.25
Salt and flavor to suit taste/0.5
Heavy cream (36% butterfat)/92.5
Gum arabic type/0.25
Sugar (preferably confectioner's)/6.5
配制方法:
Pour the thoroughly chilled cream into a deep bowl; add sugar and gum mixture. Beat with a rotary egg beater until smooth and thick. Then fold in the flavor. The sugar, arabic, and guar should be added as a single dry mix to avoid lumping of the gums.
